My baby loves to try new foods. For his curious mind, there is nothing in the world that should be left untasted. This seems to be a general policy that applies to inedible things as well – but that’s a story for another blog entry. Since introducing him to solids, my kitchen has turned into a science lab. I have always enjoyed cooking, and making my own baby food brings on a new challenge.
I love these muffins because they are healthy, with no added sugar. I always use whole wheat flour because all purpose flour and bananas are both stool hardeners, which could mean tummy trouble for the baby.
My little guy absolutely loves these muffins because they are soft and melt in his mouth. They are sure to bring on a few giggles!
Baby-Friendly Banana Muffins
1 cup whole wheat baby cereal or whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
pinch of salt
1/4 tsp nutmeg (optional)
1/4 tsp cinnamon (optional)
2 bananas, mashed (frozen bananas are super easy to work with :))
1/4 cup milk
1/4 cup butter (olive oil works just as well)
1 egg
Mix dry ingredients. Mix wet ingredients. Add wet to dry and combine. You can always add additional ingredients for an added treat depending on what your little one is eating. Some examples include: chopped dates, raisins, chocolate chips, chopped walnuts or other nuts. Spoon into greased muffin cups. Bake in a preheated 350 degree oven for 15 minutes or until tops are golden brown.
