Asparagus and Spinach Quiche

At 40g of protein per serving, this quiche is both nutritious and delicious! You’ll never guess the secret ingredient – cottage cheese! The crushed garlic croutons added a bit of crunch to the soft, delicate texture of the quiche. Typically, we don’t think of quiches as dinner food, but they are so healthy, filling, and quick to whip up after a long day of being awesome 😉

Cottage-Cheese Quiche

I used:

  • half a container of cottage cheese
  • 4 eggs
  • 1 cup of chopped asparagus
  • 1/2 cup of cooked spinach
    *Note: I have made this dish with mushrooms and broccoli and it turned out just as delish!
  • 1/2 an onion, chopped
  • garlic croutons, crushed
  • salt and pepper to taste (A little cayenne adds a bit of zing!)
  • 1/2 cup of shredded cheese (cheddar is our favourite)

Preheat oven to 350 degrees. In a skillet, saute onions. Add spinach and asparagus, and cook until soft. In a bowl, mix cottage cheese, eggs, and spices. Pour liquid mixture into a greased pie dish. Carefully stir in cooked vegetables and cheese. Top with crushed croutons. Place in oven for 45 minutes.

Make sure you set your oven timer, so you can watch tv/lie down/do your nails while dinner cooks. The laundry can wait until tomorrow!
